Mexican Stuffed Shells

The best part of this recipe isn't even the delicious seasoned beef or gooey melted cheeses...it's that it can be prepared beforehand!

 1 lb ground beef
 1 package of taco seasoning
 4 oz cream cheese
 14 jumbo pasta shells
 1 cup of taco sauce
 1 cup of cheddar cheese
 1 cup of monterey jack cheese
 3 green onions
 sour cream

Use a frying pan to cook ground beef over the fire; add taco seasoning and make sure all the beef is cooked through.

Add cream cheese, cover and simmer until cheese is melted. Blend well. Set aside and cool completely.

While ground beef is cooking, cook the pasta shells according to directions; drain. (You can also pre cook the shells or the meat mixture and bring them along in a cooler!) Pour salsa on bottom of a cookie sheet or baking dish and set the shells out individually so they don't stick together. Stuff each shell with the meat mixture. Cover shells with taco sauce. Cover with foil and warm over the fire for 15 minutes.

After 15 minutes, add shredded cheese and bake for 10-15 more minutes, with the foil removed. Top with any condiments you’d like (green onions, black olives etc.) Serve with sour cream and/or more salsa
