Chocolate Buttermilk Pancakes with Homemade Salted Caramel Sauce

Chocolate. It’s what’s for breakfast. It’s even better when paired with homemade salted caramel sauce.

Pancakes
 1 cup all-purpose flour
 2 tbsp unsweetened cocoa powder
 2 tbsp granulated sugar
 1 tbsp light brown sugar
 1 tsp cinnamon
 1 tsp baking powder
 ½ tsp baking soda
 pinch salt, optional
 1 cup buttermilk
 1 large egg
 2 tbsp canola or vegetable oil
 1 tsp vanilla extract
Salted Caramel Sauce
 1 cup granulated sugar
 ¼ cup water
 ¾ cup heavy cream or half and half
 1 tbsp vanilla extract
 ¼ cup butter
 ½ tsp kosher salt

Pancakes
1

In a large mixing bowl, whisk together first 8 ingredients and set aside.

In a large measuring cup , whisk together 4 final ingredients and add the wet into the dry ingredients.

Place batter for desired pancake size into non stick frying pan.

Serve immediately or set aside and keep warm while making salted caramel sauce.

Salted Caramel Sauce

In a saucepan combine the sugar and water.

Heat over medium-low heat until the sugar dissolves, stirring occasionally.

Increase the heat to medium-high and bring mixture to a boil without stirring.

Boil until the mixture is a deep amber color.

Remove the pan from the heat, and using caution, whisk in the cream.

Add the vanilla and stir in the butter and salt to taste; or omit salt for regular caramel sauce.
