A hearty and delicious soup that will keep you warm during those chilly nights around the campfire!

 1 lb lean stewing beef
 ½ large onion, chopped
 ½ tsp olive oil (optional)
 2 garlic cloves, crushed
 15 oz diced/crushed tomatoes, undrained
 45 oz broth (beef, chicken, vegetable)
 6 oz azuki and pinto beans
 1 cup spinach, chopped
 2 large carrots, chopped
 1 sweet potato, chopped
 2 mini turnips, chopped
 4 oz fresh portobello mushrooms, chopped
 ½ medium zucchini, peeled and diced
 2 bay leaves
 1 tsp cumin and cayenne pepper, dash of dill
 salt and pepper

In a medium to large pot, heat 1/2 tsp olive oil; brown beef, onion and garlic.

Add broth, tomatoes, veggies and seasonings. Bring to a boil; simmer, cover and cook
on low for 15 minutes to 30 minutes.

Discard bay leaf, and serve.
